Ingredients
- 600 g chicken thighs
- 400 ml coconut milk
- 1 onion
- 3 garlic
- 1 tbsp ginger
- 2 tbsp curry powder
- 1 bell pepper
- 1 tsp salt
- 1 tsp black pepper
- 20 g coriander leaves
How to make Cari coco
- Heat 2 tbsp of oil in a pan over medium heat.
- Sauté the chopped onion for 2-3 minutes until translucent and fragrant.
- Add minced garlic and grated ginger, sauté for another minute until aromatic.
- Add 600 g of chicken thighs to the pan and brown them for 5-7 minutes on all sides.
- Stir in 2 tbsp of curry powder and chopped bell pepper, along with 1 tsp of salt and 1/2 tsp of black pepper.
- Pour in 400 ml of coconut milk, stir well, and bring to a simmer.
- Let it simmer on medium-low heat for 25 minutes until the chicken is fully cooked through.
- Garnish with fresh coriander leaves just before serving.
