Jollof rice recipe

Ingredients
- 300 g long-grain rice

How to make Jollof rice
- Measure 400 g of tomatoes, 1 onion, and 1 red bell pepper for blending.
- Blend the tomatoes, onion, and bell pepper together until smooth.
- Chop the remaining onion for sautéing.
- In a pot, heat 4 tablespoons of vegetable oil over medium heat.
- Fry the blended mixture for 10 minutes, stirring frequently, until fragrant.
- Add 1 teaspoon of thyme, 2 bay leaves, 1 teaspoon of salt, and 1 teaspoon of black pepper; mix well.
- Measure 300 g of long-grain rice and add to the pot, stirring gently.
- Pour in 500 ml of chicken stock and cover the pot, reducing the heat to low.
- Cook the rice for 30-40 minutes or until it's tender and has absorbed the liquid; check periodically.
- Once cooked, fluff the rice gently with a fork to separate the grains.
- Serve hot in dishes.
