Doubles recipe
Deliciously spiced chickpea-filled flatbreads!
Ingredients
- 400 g chickpeas
- 250 g flour
- 1 tsp baking powder
- 1 tsp cumin
- 1 tsp coriander
- 1 onion
- 1 green pepper
- 1 scotch bonnet pepper
- 200 ml coconut milk
- 2 tbsp oil
- 1 tsp salt
How to make Doubles
- Soak 400 g of chickpeas overnight in water. Drain and cook them until tender, about 1 hour.
- Once cooked, drain the chickpeas and mash them in a bowl. Mix in 1 chopped onion, 1 diced green pepper, and 1 finely chopped scotch bonnet.
- To the mashed chickpeas, add 1 teaspoon of cumin, 1 teaspoon of coriander, and 1/2 teaspoon of salt. Mix until well combined.
- In a separate bowl, combine 250 g of flour, 1 teaspoon of baking powder, and a pinch of salt.
- Gradually add water to the flour mixture, working it until a smooth dough forms.
- Divide the dough into 8 small balls and roll each into flat discs about 10 cm in diameter.
- Heat a skillet over medium heat and cook each disc for 2-3 minutes on each side until golden brown.
- Fill each flatbread with the chickpea mixture and drizzle with 200 ml of coconut milk before serving.
