  1. Finely chop 1 onion and 2 cloves of garlic and set aside for use later.
  2. In a pot, heat 30 ml of oil over medium heat until shimmering.
  3. Sauté the chopped onion for about 3 minutes until translucent, stirring occasionally.
  4. Add the minced garlic and sauté for an additional minute until fragrant.
  5. Add 300 g of chopped callaloo and sauté for about 5 minutes until wilted.
  6. Pour in 1000 ml of vegetable broth and bring to a boil over high heat.
  7. Once boiling, reduce the heat to low and stir in 400 ml of coconut milk, 1 teaspoon of thyme, ½ teaspoon of salt, and ¼ teaspoon of black pepper.
  8. Simmer for 10 minutes to allow flavors to meld, then blend until smooth using an immersion blender.
  9. Serve hot, garnished with a sprig of thyme if desired.
