How to make Chorba frik

  1. Chop 1 onion, 1 carrot, and 1 celery stalk. Dice 500 g of lamb and chop 1 tomato for the soup preparation.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering, about 2 minutes.
  3. Sauté the chopped onion for 2 minutes until translucent.
  4. Add the chopped carrot and celery stalk; continue to sauté for another 3 minutes until softened.
  5. Add 500 g of diced lamb to the pot, browning on all sides for about 8 minutes until it's golden brown.
  6. Stir in the chopped tomato, 1 teaspoon of cumin, 1 teaspoon of coriander, 1 teaspoon of salt, and ½ teaspoon of black pepper, mixing well.
  7. Pour in 200 g of chickpeas and 1.5 liters of water; bring to a boil over high heat.
  8. Once boiling, reduce heat to low and simmer for 30 minutes, stirring occasionally to prevent sticking.
  9. Finally, stir in 100 g of frik and cook for an additional 20 minutes until it softens.
  10. Remove from heat and let it rest for 5 minutes before serving.
  11. Serve hot, garnished with a sprinkle of fresh herbs if desired.
