Dovga recipe
A creamy Azerbaijani yogurt soup bursting with flavor.
Ingredients
- 500 g yogurt
- 1000 ml water
- 100 g rice
- 200 g spinach
- 30 g dill
- 1 tsp salt
- 1 tsp black pepper
- 2 eggs
How to make Dovga
- Chop 30 g of spinach and 2 tablespoons of dill before starting.
- In a saucepan, bring 1 liter of water to a boil over high heat.
- Add 100 g of rice to the boiling water; cook until tender, about 15 minutes.
- In a mixing bowl, combine 500 g of yogurt with 1000 ml of water and whisk until smooth.
- Once the rice is cooked, drain it and add to the yogurt mixture.
- Season with 1 teaspoon of salt and ½ teaspoon of black pepper; mix well.
- Stir in the chopped spinach and dill, then bring to a gentle simmer over low heat.
- In a separate bowl, beat 1 egg and slowly stir it into the soup to prevent curdling.
- Ladle the soup into bowls and serve warm, garnished with extra dill if desired.
