Kak-ik recipe
A flavorful chicken soup with rich Mayan spices.
Ingredients
- 800 g chicken
- 2000 ml water
- 300 g tomatoes
- 1 onion
- 4 garlic
- 30 g cilantro
- 1 tsp pepper
- 1 tsp oregano
- 50 g achiote paste
- 300 g potatoes
How to make Kak-ik
- Chop 1 onion, 3 garlic cloves, and 300 g of tomatoes. Dice 2 potatoes and chop a handful of cilantro before starting.
- In a large pot, bring 2 liters of water to a boil over high heat.
- Add 1 whole chicken to the boiling water and cook for 30 minutes until fully cooked.
- Remove the chicken from the pot and let it cool slightly, then shred the meat and discard the skin and bones.
- Return the pot to medium heat. Stir in the chopped tomatoes and sauté for 5 minutes until softened.
- Add the diced onion and minced garlic to the pot. Sauté for an additional 5 minutes until the onion is translucent.
- Mix in 2 tablespoons of achiote paste, 1 teaspoon of oregano, and 1 teaspoon of pepper; cook for 5 more minutes until fragrant.
- Add the shredded chicken, diced potatoes, and chopped cilantro. Simmer for 30 minutes until the flavors meld together.
- Taste and adjust seasoning if necessary. Serve hot in bowls garnished with extra cilantro.
