Ingredients
- 800 g beef chuck
- 200 g carrots
- 400 g potatoes
- 150 g green beans
- 150 g corn
- 100 g onion
- 3 garlic
- 1000 ml beef broth
- 30 g cilantro
- 1 tbsp salt
- 1 tsp black pepper
How to make Olla de carne
- Cut 800 g of beef chuck into 2-inch cubes, then season generously with salt and black pepper.
- In a large pot over medium heat, add 2 tablespoons of olive oil and brown the beef on all sides for about 10 minutes.
- Add 1 chopped onion and 2 minced garlic cloves to the pot; sauté until softened, about 5 minutes.
- Pour in 4 cups of beef broth and bring the mixture to a boil.
- Add 2 chopped carrots, 2 chopped potatoes, 150 g of green beans, and 1 cup of corn to the pot, simmer for 1 hour.
- Stir occasionally during simmering to ensure even cooking of ingredients.
- Check the beef for tenderness after 1 hour, and adjust cooking time if needed.
- Before serving, garnish the stew with freshly chopped cilantro for added flavor.
- Serve hot in bowls with a slice of bread or rice on the side.
