Sancocho recipe

Ingredients
- 500 g chicken
- 300 g beef
- 2 plantains
- 300 g potatoes
- 2 corn
- 200 g carrots
- 1 onion
- 3 cloves
- 1 cilantro
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp ½ teaspoon black pepper
- 2000 ml water
How to make Sancocho
- Cut 300 g of chicken and 500 g of beef into bite-sized pieces before cooking, about 2.5 cm each.
- In a large pot, heat 2 tablespoons of olive oil over medium heat, about 2 minutes.
- Sauté 1 chopped onion and 2 minced garlic cloves until fragrant, about 3 minutes.
- Add the chicken and beef pieces to the pot, cooking until browned, about 8 minutes.
- Pour in 2 liters of water and add 3 chopped potatoes, 2 chopped carrots, and 2 sliced plantains.
- Include 1 ear of corn, season with 1 teaspoon of salt and ½ teaspoon of black pepper, and stir well.
- Bring the pot to a simmer, then cover and cook for about 1 hour, stirring occasionally, until the meat and vegetables are tender.
- Taste the broth and adjust the seasoning if needed before serving.
- Before serving, garnish the dish with a handful of freshly chopped cilantro, for added flavor.
