Ingredients
- 8 eggs
- 800 g matoke (green bananas)
- 1 onion
- 2 tomatoes
- 1 green pepper
- 2 tbsp oil
- 1 tsp salt
- 1 tsp pepper
How to make Rolex
- Peel and boil 500 g of matoke until soft, then mash it.
- Chop 1 onion, 2 tomatoes, and 1 green pepper and set aside.
- In a pan, heat 2 tablespoons of oil over medium heat. Sauté the chopped onion until golden, about 5 minutes.
- Add the diced tomatoes and chopped green pepper to the pan. Cook for about 4 minutes until soft.
- In a bowl, whisk 4 eggs with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Pour the egg mixture into the pan.
- Cook the eggs until set, about 4-5 minutes, then mix in the mashed matoke until well combined.
- Remove from heat and let it cool slightly before serving. Roll the mixture in flatbread or serve as desired.
