How to make Rolex

  1. Peel and boil 500 g of matoke until soft, then mash it.
  2. Chop 1 onion, 2 tomatoes, and 1 green pepper and set aside.
  3. In a pan, heat 2 tablespoons of oil over medium heat. Sauté the chopped onion until golden, about 5 minutes.
  4. Add the diced tomatoes and chopped green pepper to the pan. Cook for about 4 minutes until soft.
  5. In a bowl, whisk 4 eggs with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Pour the egg mixture into the pan.
  6. Cook the eggs until set, about 4-5 minutes, then mix in the mashed matoke until well combined.
  7. Remove from heat and let it cool slightly before serving. Roll the mixture in flatbread or serve as desired.
