Ingredients
- 4 bell peppers
- 2 onions
- 400 g tomatoes
- 200 g feta cheese
- 3 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 parsley

- Preheat your oven to 180°C (350°F).
- Chop 2 bell peppers and 1 onion into small pieces.
- Heat 2 tablespoons of olive oil in a pan over medium heat.
- Sauté the chopped bell peppers and onion until softened, about 5-7 minutes.
- Add 400 g of chopped tomatoes to the pan and stir well.
- Season with ½ teaspoon of salt and ¼ teaspoon of black pepper; cook for another 10 minutes, stirring occasionally.
- Stir in 200 g of crumbled feta cheese and 2 tablespoons of chopped parsley until well combined.
- Transfer the mixture to a baking dish and spread it evenly.
- Bake in the preheated oven for 20 minutes or until the top is slightly golden.
