  1. Preheat your oven to 180°C (350°F).
  2. Chop 2 bell peppers and 1 onion into small pieces.
  3. Heat 2 tablespoons of olive oil in a pan over medium heat.
  4. Sauté the chopped bell peppers and onion until softened, about 5-7 minutes.
  5. Add 400 g of chopped tomatoes to the pan and stir well.
  6. Season with ½ teaspoon of salt and ¼ teaspoon of black pepper; cook for another 10 minutes, stirring occasionally.
  7. Stir in 200 g of crumbled feta cheese and 2 tablespoons of chopped parsley until well combined.
  8. Transfer the mixture to a baking dish and spread it evenly.
  9. Bake in the preheated oven for 20 minutes or until the top is slightly golden.
