Pav bhaji recipe
Mashed vegetable curry and buttered buns.
Ingredients
- 400 g potatoes
- 200 g cauliflower
- 150 g green peas
- 2 onions
- 400 g ripe tomatoes
- 1 green pepper
- 8 soft rolls (pav)
- 2 tbsp pav bhaji masala
- 80 g butter
- 1 lime
How to make Pav bhaji
- Boil the potatoes, cauliflower and peas until very soft, then mash them roughly.
- Fry the chopped onion, pepper and tomato in a lot of butter until collapsed, with the masala.
- Add the mashed vegetables and a splash of water. Mash and cook together until it is a rough, deep-orange paste.
- Split the buns and griddle them in butter until golden. Serve with raw onion and lime.
