How to make Maqluba

  1. Chop 1 onion finely and set aside for cooking.
  2. In a large pot, heat 2 tablespoons of vegetable oil over medium heat.
  3. Add the chopped onion and sauté until golden brown, about 5 to 7 minutes.
  4. Add 800 g of chicken pieces to the pot, along with 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of cinnamon.
  5. Cook the chicken until browned on all sides, approximately 10 minutes, stirring occasionally.
  6. Layer 300 g of cauliflower florets evenly on top of the browned chicken in the pot.
  7. Next, add 300 g of rinsed basmati rice evenly over the cauliflower.
  8. Pour 600 ml of water over the rice; bring to a boil over high heat.
  9. Once boiling, reduce heat to low, cover the pot, and let it simmer for 30 minutes.
  10. After 30 minutes, remove the pot from heat and let it sit covered for 10 minutes to rest the rice and chicken.
  11. Carefully flip the pot onto a large serving platter; let the Maqluba fall out and garnish with toasted nuts or fresh herbs before serving.
