How to make Cassava pudding

  1. Peel 1.4 kg of cassava, cut it into large chunks and cut out the woody cord in the centre.
  2. Finely grate the cassava, then peel and grate 450 g of white sweet potato into the same bowl.
  3. Squeeze the gratings hard in a cloth over a bowl to remove the juice; after 15 to 30 minutes, pour off the liquid and return the white starch that has settled at the bottom to the gratings.
  4. Stir in 400 to 500 ml of coconut milk a little at a time until the mixture has the texture of thick mashed potatoes.
  5. Soften banana leaves over a flame, line a baking dish with them in a cross, spread in the mixture, fold the leaves over and cover tightly.
  6. Bake at 175 °C for about 3 hours 30 minutes, until the edges brown; in the Solomon Islands it bakes all afternoon in a motu, an earth oven of hot stones and leaves.
  7. Let it cool completely, as it is wobbly when hot and firms up as it cools, then cut into squares.
