  1. In a large pot, heat 3 tbsp olive oil over medium heat until shimmering.
  2. Chop 1 onion, mince 2 garlic cloves, 1 carrot, and 1 celery stalk into small pieces before cooking.
  3. Add the chopped onion, garlic, carrot, and celery to the pot and sauté for 5 minutes until soft.
  4. Stir in 400 g canned tomatoes, 240 g chickpeas, 2 tsp cumin, 2 tsp coriander, and 1 tsp salt, mixing well.
  5. Pour in 1 liter of vegetable broth and bring to a rolling boil.
  6. Reduce the heat to low and simmer the soup for 30 minutes, stirring occasionally.
  7. Check the seasoning and adjust it to taste before serving the soup.
  8. Garnish with chopped fresh parsley just before serving.
