How to make Poulet au coco

  1. Cut 800 g of chicken into large pieces and rub them with the juice of 1 lime, 1 tsp turmeric, 1 tsp ground cumin and 1 tsp salt.
  2. Cover and leave in the fridge 1 to 2 hours: this acid and turmeric rest is what colours and seasons the meat through.
  3. Heat 2 tbsp oil in a heavy pot and cook the chicken over medium heat 6 to 8 minutes, turning, without letting it brown hard.
  4. Add 1 chopped onion, 3 crushed garlic cloves and 20 g grated ginger, and cook 5 minutes until soft.
  5. Stir in 200 g chopped tomato and cook 5 minutes until it collapses into the fat.
  6. Pour in 400 ml coconut milk, bring to a bare simmer and cook uncovered 25 to 30 minutes until the sauce thickens and coats the chicken.
  7. Check the salt and serve with pilao rice or boiled cassava.
