- 300 g long grain rice
- 400 g canned black beans
- 1 onion
- 2 garlic
- 400 ml coconut milk
- 500 ml vegetable broth
- 1 tsp cumin
- 1 tsp salt

How to make Rice and beans
- Rinse 300 g of long grain rice thoroughly under cold water until the water runs clear to remove excess starch.
- In a medium pot, heat 1 tablespoon of olive oil over medium heat and sauté 1 chopped onion and 2 minced garlic cloves until the onion is softened, about 5 minutes.
- Stir in the rinsed rice and mix in 400 g of drained canned black beans, 400 ml of coconut milk, and 500 ml of vegetable broth, along with seasoning.
- Add 1 teaspoon of cumin, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to the pot, then stir the mixture until well combined.
- Bring everything to a boil, then reduce heat to low, cover the pot, and let it simmer for 20 minutes until the rice is tender.
- Once cooked, gently fluff the rice and beans with a fork to combine, making sure not to mash the rice.
- Chop 2 tablespoons of fresh cilantro and sprinkle over the dish for added flavor before serving.
