  1. Rinse 300 g of long grain rice under cold water until the water runs clear and set aside.
  2. In a pot, heat 1 tablespoon of oil over medium heat, then sauté 1 chopped onion and 2 minced cloves of garlic for about 3 minutes until soft.
  3. Pour in 400 ml of coconut milk along with 250 ml of water, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of thyme; bring to a boil.
  4. Add the rinsed rice into the pot, stirring well to combine, then reduce heat to low.
  5. Cover the pot and let it simmer for 15 minutes, until the rice absorbs the liquid completely.
  6. After 15 minutes, stir in 200 g of green peas, cooking uncovered for an additional 5 minutes.
  7. Fluff the rice gently with a fork before serving, garnishing with fresh thyme if you like.
