Groundnut soup recipe
A rich and hearty peanut soup bursting with flavor.
Ingredients
- 200 g groundnuts
- 400 g chicken
- 1 onion
- 3 garlic
- 1 ginger
- 2 tbsp vegetable oil
- 1000 ml water
- 1 tsp salt
- 1 tsp pepper
- 100 g spinach
How to make Groundnut soup
- Roast 200 g of groundnuts in a pan over medium heat, stirring occasionally until golden brown, about 8-10 minutes.
- Remove the groundnuts from the heat and let them cool briefly before blending into a smooth paste.
- In a pot, heat 2 tablespoons of vegetable oil over medium heat for about 2 minutes until hot.
- Sauté 1 chopped onion for 3 minutes until soft and translucent, then add 2 minced garlic cloves.
- Add 1 tablespoon of minced ginger and sauté for another 2 minutes until fragrant.
- Add 400 g of chicken pieces to the pot and brown on all sides for 7-10 minutes.
- Pour in 1 liter of water and bring to a boil, scraping the bottom of the pot.
- Stir in the groundnut paste, 1 teaspoon of salt, and 1/2 teaspoon of pepper.
- Reduce the heat to low and let the soup simmer for 20 minutes, stirring occasionally.
- Add 100 g of spinach to the pot and cook for an additional 5 minutes until wilted.
- Check seasoning and then serve hot with rice or bread for a hearty meal.
