Ingredients
- 800 g chicken
- 100 ml palm oil
- 2 onions
- 4 garlic
- 1 tbsp ginger
- 400 g tomatoes
- 1 tsp salt
- 1 tsp black pepper
- 500 ml water
- 500 g cassava
How to make Nyembwe
- Chop 1 onion, 3 cloves of garlic, and 20 g of ginger, preparing them before cooking starts.
- Heat 4 tablespoons of palm oil in a large pot over medium heat until shimmering, ensuring it doesn't smoke.
- Sauté the chopped onion, minced garlic, and ginger in the hot oil until fragrant, for about 5 minutes.
- Add 1 kg of chicken pieces to the pot, browning them on all sides for about 10 minutes to develop flavor.
- Stir in 2 diced tomatoes, 1 teaspoon of salt, and ½ teaspoon of black pepper. Cook for 10 minutes, stirring occasionally to mix.
- Pour in 500 ml of water and bring the mixture to a boil over high heat, then reduce the heat to low.
- Cover the pot and let it simmer for 30 minutes until the chicken is tender, stirring occasionally to prevent sticking.
- Serve the nyembwe hot alongside boiled cassava for a complete meal.
