Ingredients
- 800 g chicken
- 100 ml palm oil
- 1 onion
- 3 garlic
- 1 tbsp ginger
- 200 g tomato paste
- 100 g peanut butter
- 500 ml water
- 1 tsp salt
- 1 tsp black pepper
- 2 bananas
How to make Moambe
- Prepare the ingredients by chopping 1 onion, 2 cloves of garlic, and a thumb-sized piece of ginger; measure ½ cup of palm oil.
- In a large pot, heat ½ cup of palm oil over medium heat until shimmering, about 2-3 minutes.
- Add the chopped onion, garlic, and ginger to the pot; sauté for about 5 minutes until softened and fragrant.
- Introduce 1 kg of chicken pieces, cooking until they are browned on all sides, around 7 minutes in total.
- Stir in 3 tablespoons of tomato paste, ½ cup of peanut butter, and 2 cups of water; mix well to combine all ingredients evenly.
- Season with salt and black pepper to taste, then cover the pot and let it simmer for about 45 minutes until the chicken is cooked through and tender.
- Once cooked, garnish the dish with fresh banana slices and serve hot.
