How to make Jollof rice

  1. Chop 1 onion and 1 red bell pepper, and set aside alongside 2 tomatoes for blending.
  2. Blend 2 tomatoes, 1 red bell pepper, and 1 onion until smooth, then pour into a bowl and set aside.
  3. In a large pot, heat 3 tablespoons of vegetable oil over medium heat for about 2-3 minutes.
  4. Sauté the chopped onion for 5 minutes until it becomes translucent and fragrant.
  5. Add the blended tomato mixture to the pot and cook for 10-15 minutes, stirring occasionally until it thickens and reduces.
  6. Add 300 grams of long-grain rice to the pot, stirring to coat the rice evenly.
  7. Pour in 600 milliliters of chicken broth, then add 2 minced garlic cloves, 1 teaspoon of thyme, and 1 bay leaf.
  8. Season with 1 teaspoon of salt and 1/2 teaspoon of pepper, stirring to combine everything together.
  9. Bring to a boil, then cover the pot and reduce heat to low.
  10. Simmer for 25-30 minutes until the rice is fluffy and liquid is absorbed.
  11. Fluff the rice gently with a fork and let it rest for 5 minutes before serving.
  12. Serve hot with your choice of protein or vegetables.
