How to make Rice and curry

  1. Rinse 300 g of basmati rice under cold water until the water runs clear, then drain it thoroughly.
  2. In a pot over medium heat, add 2 tablespoons of oil, then sauté 1 chopped onion, 2 minced garlic cloves, and 1 inch of minced ginger until fragrant, about 3-4 minutes.
  3. Add 500 g of chicken pieces, cooking until browned on all sides, about 5-7 minutes, then stir in 1 tablespoon of curry powder to infuse.
  4. Pour in 400 ml of coconut milk, bring to a simmer, stirring carefully, then add 200 g of mixed vegetables.
  5. Cover the pot and cook for 20-25 minutes until the chicken is fully cooked through, stirring occasionally to prevent sticking.
  6. Remove from heat and let it rest for a few minutes to settle the flavors.
  7. Serve hot with the cooked rice, garnished with fresh herbs if desired like cilantro or parsley.
  8. Enjoy your meal with a side of flatbread or roti if you like.
