Ingredients
- 1200 g lamb shoulder
- 4 cloves
- 60 ml olive oil
- 60 ml juice of 1 lemon
- 2 tbsp oregano
- 1 tsp salt
- 1 tsp black pepper
- 800 g potatoes
- 400 g carrots
- 1 onion
How to make Kleftiko
- Preheat the oven to 160°C (320°F) and prepare a roasting pan by lightly greasing it.
- Mince 4 garlic cloves and place them in a mixing bowl with 4 tablespoons of olive oil.
- Add the juice of 1 lemon, 2 teaspoons of oregano, 1 teaspoon of salt, and 1 teaspoon of black pepper.
- Whisk the ingredients together until fully combined to create a marinade.
- Rub the marinade all over a 1.5 kg lamb shoulder evenly to ensure flavor penetration.
- Chop 800 g of potatoes, 400 g of carrots, and 1 onion into large pieces for roasting.
- Place the seasoned lamb in the roasting pan and surround it with the chopped vegetables.
- Cover the pan tightly with foil and roast in the oven for 2.5 to 3 hours until the lamb is tender.
- After the initial roasting time, remove the foil and continue cooking for an additional 30 minutes until the lamb browns.
- Once cooked, let the lamb rest for 10 minutes before slicing and serving with the vegetables.
