  1. Cut 800 g of beef into 2 cm cubes and season with 1 teaspoon of salt and ½ teaspoon of black pepper.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  3. Add the beef cubes to the pot and brown them for about 8 minutes, turning occasionally.
  4. Chop 1 onion, 2 carrots, and 1 bell pepper; add these to the pot and sauté for 5 minutes.
  5. Stir in 2 tablespoons of tomato paste to combine with the vegetables in the pot.
  6. Pour in 500 ml of water, bringing the mixture to a rapid boil, then reduce the heat.
  7. Add 400 g of chopped potatoes to the pot, stirring gently to combine.
  8. Cover and let simmer gently for 1 hour until the beef is tender and potatoes are cooked.
  9. Taste and adjust seasoning if necessary before serving hot.
  10. Serve hot, ideally with crusty bread on the side.
