Harissa recipe

Ingredients
- 100 g dried red chilies
- 4 garlic cloves
- 2 tbsp cumin seeds
- 2 tbsp coriander seeds
- 60 ml olive oil
- 30 ml lemon juice
- 1 tsp salt
How to make Harissa
- Soak 100 g of dried red chilies in hot water for 15 minutes until they soften.
- After soaking, drain the chilies and carefully remove their stems and seeds.
- Toast 2 teaspoons of cumin seeds and 2 teaspoons of coriander seeds in a dry pan over medium heat for about 3 minutes until fragrant.
- In a blender, combine the soaked chilies, 4 garlic cloves, the toasted spices, 60 ml of olive oil, 2 tablespoons of lemon juice, and 1 teaspoon of salt. Blend until smooth and creamy.
- Taste the harissa and adjust the seasoning if necessary, storing the mixture in a jar for later use.
