How to make Khao soi

  1. Fry the curry paste and turmeric in a little coconut cream until it splits and smells fragrant.
  2. Add the chicken, the rest of the coconut milk and water to cover. Simmer until the chicken is tender.
  3. Season with fish sauce until it tastes rounded, not sharp.
  4. Boil most of the noodles; fry a small handful until crisp for the top.
  5. Bowl the noodles, ladle over the curry and chicken, and finish with crisp noodles, shallot, pickled greens and lime.
