Kibbeh recipe

Ingredients
- 800 g beef sirloin
- 200 g carrots
- 150 g celery root
- 1 onion
- 50 g butter
- 500 ml vegetable broth
- 200 ml heavy cream
- 2 bay leaves
- 1 tsp black pepper
- 1 tsp salt
- 2 tbsp lemon juice
- 2 tbsp flour
How to make Kibbeh
- In a large pot, melt 3 tablespoons of butter over medium heat.
- Sear 50 g of beef sirloin in the melted butter until browned on all sides, about 5-7 minutes.
- Chop 1 onion and add it to the pot, along with 2 chopped carrots and 150 g of peeled and diced celery root.
- Sauté the mixture until the vegetables soften, about 7-10 minutes.
- Sprinkle 3 tablespoons of flour over the vegetable mixture and stir continuously for 2 minutes.
- Pour in 1.5 liters of vegetable broth and add 2 bay leaves, 1 teaspoon of salt, and 1 teaspoon of black pepper.
- Simmer uncovered for 90 minutes, stirring occasionally to prevent sticking.
- Remove the beef from the pot and set aside to cool slightly for slicing.
- In a blender, combine the sauce with 200 ml of heavy cream and the juice of 1 lemon.
- Blend the mixture until smooth and creamy, adjusting seasoning if necessary.
- Slice the beef sirloin and serve it with the creamy sauce poured generously over the top.
