How to make Okonomiyaki

  1. Shred the cabbage very fine. Make a loose batter of flour, egg and dashi, then fold the cabbage through until barely coated.
  2. Spread it into a thick round in an oiled pan and lay the pork slices on top.
  3. Cook without pressing until the base is deep brown, then flip and cook the pork side.
  4. Flip back, paint with sauce and zigzag mayonnaise over it. Finish with bonito flakes so they move in the heat.
