Okonomiyaki recipe
A cabbage pancake you build yourself.
Ingredients
- 400 g white cabbage
- 120 g plain flour
- 2 eggs
- 100 ml dashi stock
- 150 g pork belly, thin sliced
- 3 tbsp okonomiyaki or brown sauce
- 2 tbsp mayonnaise
- 5 g bonito flakes
How to make Okonomiyaki
- Shred the cabbage very fine. Make a loose batter of flour, egg and dashi, then fold the cabbage through until barely coated.
- Spread it into a thick round in an oiled pan and lay the pork slices on top.
- Cook without pressing until the base is deep brown, then flip and cook the pork side.
- Flip back, paint with sauce and zigzag mayonnaise over it. Finish with bonito flakes so they move in the heat.
