Ingredients
- 800 g lamb shoulder
- 600 g potatoes
- 300 g carrots
- 2 onions
- 2 garlic
- 1 beef stock
- 1 tbsp thyme
- 2 bay leaves
- 1 tsp salt
- 1 tsp black pepper
How to make Irish stew
- Cut 1 kg of lamb shoulder into uniform chunks and season generously with 1 tsp salt and 1 tsp black pepper.
- In a large pot, heat a splash of oil over medium heat until shimmering.
- Add the seasoned lamb chunks to the pot and brown them in batches, about 5 minutes each batch.
- Remove the browned lamb and set aside, then add 1 chopped onion to the pot.
- Sauté the chopped onion for 3 to 4 minutes, scraping up any browned bits from the bottom.
- Stir in 2 minced garlic cloves and cook for an additional minute until fragrant.
- Add 3 chopped carrots and 600 g of chopped potatoes to the pot with the onions.
- Pour in 1.5 L of beef stock, stirring to combine all ingredients well.
- Add 2 tsp dried thyme and 2 bay leaves, bringing the mixture to a boil.
- Reduce the heat and return the browned lamb to the pot, then cover and simmer for 1.5 hours.
- After simmering, taste and adjust seasoning with salt and black pepper if needed.
- Serve the Irish stew hot, garnished with chopped fresh parsley if desired.
