How to make Colcannon

  1. Peel and chop 1 kg of potatoes into evenly sized pieces for boiling.
  2. Place the chopped potatoes in a pot and cover with salted water.
  3. Bring the water to a boil and cook the potatoes until tender, about 15 minutes.
  4. While the potatoes are boiling, finely chop 100 g of cabbage and 100 g of green onions.
  5. In a large pan, heat 50 g of butter over medium heat until melted.
  6. Add the chopped cabbage and green onions, and sauté for 5 minutes until softened.
  7. Once the potatoes are tender, drain them and place them back in the pot.
  8. Mash the drained potatoes with 150 ml of milk, 50 g of butter, and 1 tsp salt until smooth.
  9. Fold in the sautéed cabbage and green onions, mixing until evenly distributed.
  10. Season the mixture with 1 tsp black pepper to taste.
  11. Serve the colcannon warm, optionally garnished with an additional pat of butter.
