Gigantes plaki recipe
Big beans baked in tomato and dill.
Ingredients
- 300 g dried butter beans
- 400 g ripe tomatoes
- 1 onion
- 1 carrot
- 3 garlic
- 1 fresh dill
- 2 tbsp tomato purée
- 5 tbsp olive oil
How to make Gigantes plaki
- Soak the beans overnight and boil until just tender but not bursting. Keep some of the water.
- Soften the onion, carrot and garlic in plenty of olive oil, then add the tomato and purée.
- Fold the beans through with enough of their water to keep it loose, and a lot of dill.
- Bake at 180°C in an open dish until the top browns and the sauce thickens, about forty-five minutes. Best warm, not hot.
