Ingredients
- 1200 g mussels
- 800 g potatoes
- 50 g butter
- 4 garlic
- 250 ml white wine
- 30 g parsley
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp oil
How to make Moules-frites
- Clean 1 kg of mussels under cold running water, scrubbing the shells and removing beards thoroughly.
- Cut 800 g of potatoes into thin fries and soak them in cold water for 30 minutes to reduce starch.
- In a pot, melt 50 g of butter over medium heat for about 2 minutes until melted and bubbly.
- Add 2 minced garlic cloves, sauté for 2 minutes until fragrant but not browned.
- Add the cleaned mussels to the pot along with 250 ml of white wine; cover the pot tightly.
- Cook the mussels for about 5-7 minutes until they open, shaking the pot occasionally.
- While mussels are cooking, remove the potatoes from the water and drain well.
- In a separate pan, heat oil to 180°C and fry the potatoes for 5-6 minutes until golden and crispy.
- Once cooked, drain the fries on paper towels and season with salt.
- Serve the mussels in bowls with fries on the side, garnished with fresh parsley.
