Ingredients
- 200 g rye flour
- 100 ml water
- 100 g rice
- 250 ml milk
- 50 g butter
- 1 tsp salt
- 1 egg
How to make Karjalanpiirakka
- In a saucepan, combine 100 g of rice with 250 ml of milk. Cook on low heat for about 30 minutes until the rice is soft and creamy.
- Once the rice is cooked, allow it to cool completely before using.
- In a mixing bowl, combine 200 g of rye flour, 100 ml of water, and a pinch of salt. Mix until the dough is smooth and pliable.
- On a floured surface, take the dough and roll it into thin circles about 10 cm in diameter.
- Place a generous spoonful of the cooled rice filling in the center of each circle of dough.
- Carefully fold the edges of the dough over the filling, pinching to seal well and form an enclosed pocket.
- Preheat your oven to 225°C before baking the pastries.
- Arrange the pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes until the edges turn golden brown.
- Once baked, brush the tops with 50 g of melted butter before serving.
