Ingredients
- 300 g rye flour
- 100 g butter
- 150 ml water
- 200 g carrots
- 200 g potatoes
- 1 tsp cumin seeds
- 1 tsp salt
- 100 g sour cream
How to make Sklandrausis
- Preheat your oven to 200°C (400°F) to prepare for baking the pastries.
- In a mixing bowl, combine 100 g of rye flour with 100 g of softened butter and 150 ml of water.
- Add 1 teaspoon of salt to the mixture and stir until a dough forms that is smooth and pliable.
- Peel and chop 2 medium potatoes and 2 carrots into small pieces for boiling.
- Boil the chopped potatoes and carrots in salted water for about 15 minutes until they are softened.
- Drain the vegetables and mash them with 1 teaspoon of cumin seeds until they are well mixed.
- On a lightly floured surface, roll out the dough to about 5 mm thick and cut out circles approximately 10 cm in diameter.
- Place 2 tablespoons of the vegetable mixture in the center of each circle of dough.
- Fold the edges of the dough up to create a pastry shape, pinching to seal the filling inside.
- Arrange the filled pastries on a baking tray lined with parchment paper for baking.
- Bake the pastries in the preheated oven for 30-35 minutes until they are golden brown and crisp.
- Serve the sklandrausis warm, accompanied by 100 g of sour cream for dipping.
