- 800 g beef chuck
- 2 onions
- 3 carrots
- 4 garlic
- 500 ml beef broth
- 330 ml Belgian beer
- 2 bay leaves

- 1 tsp salt
- 1 tsp black pepper

- Stir in 2 tablespoons of mustard until well combined with the vegetables.
- Pour in 330 ml of Belgian beer and 500 ml of beef broth; add 2 bay leaves and 1 teaspoon of thyme.
- Bring the mixture to a boil, then reduce heat to low and cover; let it simmer for 1.5 hours until beef is tender.
- Once cooked, remove from heat and let it rest for 10 minutes before serving.
- Serve the carbonnade flamande hot, with crusty bread or fries.
