Bhuna khichuri recipe

Ingredients
- 250 g rice
- 100 g moong dal
- 2 onions
- 1 tbsp ginger
- 4 garlic
- 2 green chili
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 2 bay leaves
- 50 g ghee
- 1 tsp salt
- 1000 ml water
How to make Bhuna khichuri
- Rinse 100 g of rice and 100 g of moong dal together under cold water until the water runs clear.
- In a pot, heat 50 g of ghee over medium heat until melted and hot, about 1-2 minutes.
- Add 1 sliced onion to the pot and sauté for about 5 minutes until it turns golden brown.
- Stir in 1 tablespoon of minced ginger and 1 tablespoon of minced garlic; cook for 2 minutes until fragrant.
- Add 1 chopped green chili to the pot and cook for an additional minute to enhance the flavor.
- Stir in 1 teaspoon of turmeric powder, 1 teaspoon of cumin powder, and 2 bay leaves; cook for another minute, stirring frequently.
- Add the rinsed rice and moong dal to the pot, and then pour in 1.5 liters of water and 1 teaspoon of salt.
- Bring the mixture to a boil over high heat, then reduce the heat to low and cover the pot.
- Let it simmer for about 20 minutes until the rice and dal are cooked through and the water is absorbed; check for doneness.
- Turn off the heat and let it rest for 5 minutes before fluffing with a fork.
- Serve warm in bowls, garnished with fresh herbs if desired.
