How to make Tave kosi

  1. Preheat your oven to 180°C (350°F).
  2. Chop 1 onion finely and set aside.
  3. Heat 2 tablespoons of oil in a pan over medium heat.
  4. Sauté the chopped onion until golden brown, about 5 minutes.
  5. Add 600 g of diced lamb to the pan and cook until browned on all sides, around 10 minutes.
  6. Season the meat with 1 teaspoon of salt and ¼ teaspoon of black pepper; mix well.
  7. Stir in 200 g of rice and combine everything thoroughly.
  8. Add 600 ml of water and bring the mixture to a boil.
  9. Once boiling, transfer the mixture to an ovenproof dish and cover.
  10. Bake in the oven for 30 minutes to allow the flavors to meld.
  11. In a bowl, whisk together 500 g of yogurt and 1 egg until smooth.
  12. Pour the yogurt mixture over the cooked lamb and rice and bake for another 30 minutes or until set.
