How to make Matoke

  1. Peel 1 kg of green bananas and chop them into chunks.
  2. In a pot, heat 2 tablespoons of vegetable oil over medium heat. Add 1 chopped onion and sauté until golden, about 5 minutes.
  3. Add 2 diced tomatoes to the pot and cook until soft, about 3 minutes.
  4. Stir in the banana chunks, mixing well. Add 1 teaspoon of salt and 500 ml of water.
  5. Cover the pot and simmer for about 30 minutes until the bananas are tender.
  6. Remove the pot from heat and let the Matoke rest for a few minutes before serving. Serve warm as a side dish.
