Calulu recipe
A rich and flavorful stew from São Tomé!
Ingredients
- 600 g chicken
- 100 ml palm oil
- 2 onions
- 3 tomatoes
- 1 green bell pepper
- 200 g okra
- 150 g fish (dried)
- 3 garlic
- 1 tsp salt
- 1 tsp black pepper
How to make Calulu
- Cut 1 kg of chicken into bite-sized pieces and season with 1 teaspoon of salt and 1 teaspoon of black pepper. Set aside.
- Chop 1 onion and mince 3 garlic cloves. Cut 2 tomatoes and 1 green bell pepper into pieces. Prepare 150 g of okra and 100 g of dried fish.
- In a large pot over medium heat, pour in 3 tablespoons of palm oil and let it heat up.
- Add the chopped onion to the pot. Sauté for about 5 minutes until the onion becomes translucent and fragrant.
- Stir in the minced garlic and cook for an additional minute until aromatic.
- Add the seasoned chicken to the pot. Cook for 10 to 12 minutes, stirring occasionally, until the chicken is browned.
- Mix in the chopped tomatoes and green bell pepper, cooking for another 5 minutes until slightly softened.
- Stir in the okra and dried fish. Cover the pot and let it simmer for 45 minutes, stirring occasionally to prevent sticking.
- Taste the stew after 45 minutes and adjust the seasoning as needed. Serve hot with rice or plantains.
