- 1000 g chicken pieces
- 1 onion
- 4 garlic
- 1 bell pepper
- 1 tbsp thyme
- 1 tsp allspice
- 2 tbsp tomato paste
- 500 ml chicken broth
- 2 tbsp oil
- 1 tsp salt
- 1 tsp black pepper

- Prepare all ingredients: season 1 kg of chicken pieces with salt, black pepper, thyme, and allspice and set aside.
- In a large pot, heat 30 ml of oil over medium heat until shimmering.
- Brown the seasoned chicken pieces for about 5-7 minutes, turning until golden brown, then remove them from the pot.
- In the same pot, sauté and soften 1 chopped onion, 2 minced garlic cloves, and 1 chopped bell pepper for about 3 minutes.
- Stir in 2 tablespoons of tomato paste and 500 ml of chicken broth, mixing well.
- Return the browned chicken to the pot and combine with the mixture.
- Cover the pot and simmer on low heat for 45 minutes until the chicken is tender.
- Remove from heat and let it rest for 5 minutes before serving.
