- 2 tsp salt
- 1 tsp black pepper
- 2 tbsp vegetable oil
- 4 kitchen skewers
- 400 g ugali
- 200 g sukuma wiki
How to make Nyama choma
- Cut 1 kg of beef steak into 2-inch chunky pieces and marinate with 1 teaspoon of salt, 1 teaspoon of black pepper, and 2 tablespoons of vegetable oil for 30 minutes.
- Preheat your grill to medium-high heat until hot, ensuring proper cooking for the meat.
- Thread the marinated beef chunks onto kitchen skewers, leaving 1 inch between each piece for even cooking.
- Place the skewers on the heated grill and cook for 10-15 minutes, turning occasionally until the beef reaches your desired doneness.
- While grilling, prepare ugali by bringing 1.5 liters of water to a rolling boil and adding 400 g of maize flour, stirring continuously to avoid lumps.
- Once ugali thickens, reduce the heat and let it cook for another 5-10 minutes until firm, stirring occasionally to prevent sticking.
- Remove the ugali from heat and let it rest for a few minutes before serving.
- Serve the grilled nyama choma hot alongside the ugali and enjoy with a side of sautéed sukuma wiki.
