Ingredients
- 400 g eggplant
- 4 tbsp olive oil
- 4 pita bread
- 4 hard-boiled eggs
- 200 g hummus
- 100 g pickles
- 200 g tomatoes
- 30 g parsley
- 1 tsp salt
- 1 tsp pepper
How to make Sabich
- Preheat your oven to 200°C (400°F) to prepare for roasting.
- Slice the eggplant into 1 cm rounds, then brush each round with 2 tablespoons of olive oil.
- Season the eggplant slices with 1 teaspoon of salt and 1/2 teaspoon of pepper, ensuring even coverage.
- Place the eggplant slices on a baking tray and roast in the oven for 20 minutes until golden and tender.
- While the eggplant is roasting, cut the pita bread in half to prepare for filling.
- Warm the pita halves in the oven for about 5 minutes until they are soft and pliable.
- Once roasted, remove the eggplant from the oven and let it cool slightly.
- Assemble each pita by spreading 2 tablespoons of hummus on the inside, then layer in the roasted eggplant, hard-boiled eggs, pickles, and diced tomatoes.
- Sprinkle chopped parsley over the assembled pita and serve immediately while warm.
