Pasticada recipe

Ingredients
- 800 g beef chuck
- 500 ml red wine
- 2 onions
- 2 carrots
- 4 garlic
- 2 bay leaves
- 3 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 150 g prunes
- 2 tbsp tomato paste
How to make Pasticada
- Prepare the marinade by mixing 1 kg of beef chuck with 500 ml of red wine, 4 minced garlic cloves, and 3 bay leaves.
- Cover and refrigerate the marinated beef overnight to enhance flavors and tenderness.
- In a large pot, heat 3 tbsp of olive oil over medium-high heat.
- Sear the marinated beef for about 5-7 minutes until browned on all sides, then remove it from the pot.
- In the same pot, add 1 chopped onion and 1 chopped carrot, sautéing for about 5 minutes until softened.
- Return the browned beef to the pot, pouring in the marinade along with 150 g of prunes, 2 tbsp of tomato paste, 1 tsp of salt, and 1 tsp of black pepper.
- Reduce the heat, cover, and simmer on low for 2 hours until the beef is fork-tender.
- Once cooked, remove from heat and let it rest for a few minutes before slicing.
- Serve the pasticada with gnocchi or polenta for a satisfying meal.
