Ingredients
- 300 g arborio rice
- 400 g squid
- 1 onion
- 2 garlic
- 1 fish stock
- 3 tbsp olive oil
- 2 tbsp black cuttlefish ink
- 20 g parsley
- 1 tsp salt
- 1 tsp pepper
How to make Crni rizot
- Finely chop 1 onion and mince 2 cloves of garlic, setting aside for later use.
- In a large pan, heat 3 tbsp of olive oil over medium heat.
- Sauté the chopped onion until translucent, about 3 minutes, then add the minced garlic.
- Add 400 g of cleaned and sliced squid to the pan, cooking for approximately 4-5 minutes until opaque.
- Stir in 300 g of arborio rice, toasting it lightly for 2 minutes to coat with oil.
- Gradually add 1 liter of fish stock, stirring continuously until the liquid is mostly absorbed before adding more.
- Mix in 2 tbsp of black cuttlefish ink, 1 tsp of salt, and 1 tsp of pepper, cooking for an additional 10 minutes until creamy.
- Remove from heat and garnish the risotto with chopped parsley before serving.
