How to make Koshari

  1. In a pot, cook 150 g of brown lentils in boiling water for 20 minutes, then drain them well.
  2. In a separate pot, heat 3 tablespoons of vegetable oil over medium heat.
  3. Sauté 1 chopped onion in the oil until it turns golden brown, about 7 minutes.
  4. Add 2 minced garlic cloves and 1 teaspoon of cumin, stirring for 1 minute until fragrant.
  5. Pour in 400 g of canned tomatoes along with 1 teaspoon of salt and 1/2 teaspoon of pepper.
  6. Let the mixture simmer for 10 minutes, stirring occasionally.
  7. Meanwhile, cook 100 g of rice and 150 g of small pasta based on package instructions, then drain both.
  8. In a large bowl, combine the rice, pasta, and tomato mixture, mixing until evenly distributed.
  9. Let the combined mixture rest for a few minutes to enhance the flavors.
  10. Serve warm, garnished with additional herbs if desired.
