Traditional food of Belize: 12 dishes to know
Traditional Belizean food is the sum of four kitchens: Kriol rice and beans cooked in coconut milk, Mestizo and Maya corn snacks seasoned with recado, and Garifuna cassava and seafood. Chicken and fish are eaten far more than beef or pork. The dishes to know first are rice and beans with stew chicken, fry jacks at breakfast, garnaches and the Garifuna hudut.
What Belizean food is built on
Belizean cooking brings together every community in the country. The Kriols, descendants of British settlers and enslaved Africans, cook rice and beans, stews and coconut breads. Mestizo and Maya families cook with corn, beans and recado, a red achiote paste. The Garifuna cook with cassava, plantain, coconut and seafood. Over time, dishes from each group have become everyday food for all.
The coconut is everywhere: its milk goes into rice, soups and breads, and its grated meat into most desserts. Common ingredients include cassava, plantain, habanero pepper, chayote, called chocho, allspice, ginger, thyme, salt fish, pig tail and recado. Belizeans eat much more chicken and fish than beef or pork. Breakfast is fry jacks, johnny cakes or homemade flour tortillas with refried beans, eggs and cheese; at midday, when schools and some businesses close for lunch, families sit down to rice and beans, tamales, panades or a soup.
Kriol classics
A Kriol dinner is rice and beans with some meat and a salad of potato, vegetables or coleslaw. Seafood, from fish to conch and lobster, is common, as are game meats such as iguana, deer, peccary and gibnut, a large rodent.
- Rice and beans — Long-grain rice cooked in coconut milk and the dark liquor of stewed red kidney beans, which turns the grains brown. It is the national dish of Belize, with its own National Rice and Beans Day. Some cooks add salt beef, pig tail or bacon. The recipe came with the Kriols' Jamaican roots, which is why it is so close to Jamaican rice and peas.
- Stew chicken — Brown stew chicken is the classic partner of rice and beans, above all on Sundays, served with fried plantain and potato salad or coleslaw.
- Bile up — Also called boil up, the cultural dish of the Kriols: boiled eggs, fish or pig tail with cassava, yam, sweet potato and green plantain, eaten with a tomato sauce.
- Fry jacks and johnny cakes — The two breakfast breads. Fry jacks are leavened flour dough cut into pieces and fried until puffed, eaten with beans, cheese or jam; johnny cakes are round, fluffy biscuits topped with butter or a slice of cheese.
Mestizo and Maya dishes
Mestizo and Maya cooking runs on corn masa, beans and recado. The most famous Maya dish is caldo, a soup, and corn also goes into tamales, atole, a thick corn drink, and tortillas cooked on the comal.
- Escabeche — In Belize, an onion soup rather than pickled fish. Chicken is simmered with garlic, peppercorns and allspice, crisped, then returned to a broth sharpened with vinegar, onions and whole hot peppers. It is eaten with warm corn tortillas.
- Cochinita pibil — Yucatec Maya pork marinated in achiote and sour orange, wrapped in banana leaves and slow-roasted, traditionally in an underground pit called a pib. It comes from the Yucatán Peninsula, which Belize shares with Mexico.
- Garnaches — Small fried corn tortillas spread with refried beans, then topped with shredded cheese and a relish of onion, habanero and vinegar. Originally a Mestizo snack, they are now eaten across the country.
- Panades — Corn-dough turnovers filled with fish, chicken or beans, deep-fried and topped with pickled onion or salsa. They are sold as street food.
- Salbutes — Puffed, deep-fried tortillas topped with lettuce, avocado, pulled chicken or turkey, tomato and pickled onion. They come from the Yucatán and are an evening meal, sold in small restaurants called panucherías.
Garifuna dishes
The Garifuna cook with cassava, plantain, coconut and fish, and some of their dishes have spread to the whole country.
The Kriols took one Garifuna recipe as their own: bammy, a small cake of grated, pressed cassava, fried lightly, dipped in coconut milk and fried again, eaten at breakfast or with fish.
- Hudut — Fish cooked in coconut milk, served with half-ripe plantains mashed into a thick paste. A spicier version without coconut milk is closer to a fish soup.
- Ereba — Cassava bread. Grated cassava is squeezed dry in a long woven basket called a ruguma, left to dry overnight, sieved through flat round baskets into flour and baked as thin cakes on a large iron griddle. It is eaten with fish, with hudut or with gravy.
- Dukunu — Sweetened corn, either cornmeal or fresh sweet corn, wrapped in banana leaf or foil and boiled. Also called tamalito, its name is said to be the Garifuna word for boiled corn, and it is rooted in both Maya and African traditions. It is traditionally sold by street vendors on bicycles.
Sweets, drinks and neighbours
Belizean desserts lean on coconut: coconut tarts, coconut crust, tablata, grated coconut baked with ginger and sugar, and cut-o-brute, the same made with coconut chunks. Cassava pone is a dense cassava cake, sometimes with raisins, and Kriols also make powder bun and potato pudding. Fresh juices are the usual drink, and homemade wines of berries, cashew fruit, grapefruit or rice are common.
Belize sits at the meeting point of Central American cooking, the Yucatán and the English-speaking Caribbean. Compare it with the traditional food of Guatemala, whose Caribbean coast also has Garifuna cooking, and the traditional food of Mexico.
