Som tam recipe
Green papaya pounded sharp and hot.
Ingredients
- 400 g green papaya
- 4 long beans
- 8 cherry tomatoes
- 40 g roasted peanuts
- 2 tbsp dried shrimp
- 2 garlic
- 1 tbsp palm sugar
- 2 limes
- 2 tbsp fish sauce
How to make Som tam
- Pound the garlic and chilli to a rough paste in a large mortar.
- Add the palm sugar, lime juice and fish sauce and pound to dissolve. Taste, equal parts sour, hot, salty, sweet.
- Bruise the beans and tomatoes, then add the shredded papaya and pound gently while turning, so it drinks the dressing without turning to mush.
- Fold in the peanuts and dried shrimp. Eat at once.
