Ingredients
- 300 g pork mince
- 1 holy basil
- 4 garlic
- 2 eggs
- 1 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 300 g jasmine rice
How to make Pad krapow moo
- Pound the garlic and chilli together, not too fine.
- Get the wok smoking. Fry the paste for seconds, then the pork, pressing it flat to catch colour before you stir.
- Splash in the sauces and a little water, then kill the heat and fold through the basil until it just wilts.
- Fry an egg hard in hot oil so the edges blister and the yolk stays soft. Serve over rice with the egg on top.
