Ingredients
- 250 g puff pastry
- 200 ml milk
- 100 ml heavy cream
- 100 g sugar
- 4 egg yolks
- 1 tsp vanilla extract
- 1 pinch cinnamon
- 1 tsp lemon zest
How to make Pastéis de nata
- Preheat the oven to 220°C (428°F) and prepare your muffin tins by greasing them lightly.
- Roll out 250 g of puff pastry on a floured surface to a thin sheet.
- Cut the pastry into circles that fit your muffin tins, then press them into the tins evenly.
- In a saucepan, combine 200 ml of milk, 100 ml of heavy cream, 100 g of sugar, and the zest of 1 lemon.
- Heat the mixture over medium heat until warm, about 5 minutes, stirring occasionally.
- In a bowl, whisk 6 egg yolks until smooth and gradually incorporate the warm milk mixture.
- Add 1 teaspoon of vanilla extract and 1 teaspoon of cinnamon to the mixture, stirring well to combine.
- Pour the custard into the pastry circles, filling them about 3/4 full, then bake for 15-20 minutes.
- Bake until the custard tops are golden brown and slightly puffed, checking for doneness.
- Remove from the oven and allow to cool slightly before serving warm or at room temperature.
